- En el vaso de la Thermomix echar leche, azúcar y mantequilla y programar 1 minuto, 37°, vel 2.
- Añadir yemas y levadura desmenuzada con las manos y mezclar 10 seg, vel 4.
- Agregar harina y sal 10 seg, vel 6 y a continuación programar 2 minutos, vaso cerrado, vel espiga.
- Meter la masa en el molde apretando con las palmas las manos, no es necesario que cubra toda la base porque al levar se expande por todo el molde.
- Tapar con un paño limpio y dejar levar como mínimo 1 hora en un sitio libre de corrientes de aire. Yo la dejo levar en el horno cerrado.
- Transcurrido el tiempo acordado, pintar de clara batida y precalentar horno a 200°.
- Meter en el horno unos 20 minutos, si fuese necesario porque se dore mucho taparlo a media cocción con papel de aluminio. Dejar enfriar en una rejilla.
- Mientras tanto vamos preparando la crema, para ello meter todos los ingredientes en el vaso y programar 8 minutos, 100° vel 4. Dejar enfriar al igual que la masa a temperatura ambiente.
- Cuando enfríe cortar el disco en dos mitades y rellenar de crema extendiéndola muy bien
- Preparar la cobertura: Echar en vaso chocolate y nata y programar 7 minutos, 90° vel 2
- Añadir la mantequilla y mezclar 3 seg, vel 3.
- En caliente repartir por toda la parte superior ayudándonos de una espátula.
