  2. 800 gramos leche
  3. 2 dientes ajo
  4. 1 ramillete perejil fresco. (solo las hojas)
  5. 50 gramos aceite de oliva
  6. 100 gramos mantequilla
  7. 185 gramos harina de repostería
  8. 1/3 de cucharadita de nuez moscada en polvo
  9. 1/3 de cucharadita de pimienta blanca molida
  10. Sal. (ten cuidado no te pases, piensa que el bacalao, ya está sabroso)
  11. 4 huevos batidos
  12. Pan rallado a demanda
  13. Aceite de oliva para freír las croquetas

Instructions to make to make Croquetas de bacalao (Thermomix)

  1. Pon en el vaso el bacalao y la leche y programa 7 minutos/ 100 grados/ giro a la izquierda/ vel. cuchara. Cuela para separar el bacalao y la leche. Reserva.
  2. Pon en el vaso los ajos, el perejil y el aceite, programa 5 seg/ vel. 7.
  3. Añade la mantequilla y sofríe 5 minutos/ varoma/ vel. 1.
  4. Añade la harina y rehoga 3 minutos/ varoma/ vel. 2. Remueve con la espátula despegando bien el roux del interior del vaso.
  5. Agrega la leche reservada, la nuez moscada, la pimienta y la sal y mezcla 10 seg/ vel. 6.
  6. Añade un poco de bacalao, más o menos la mitad, y programa 3 minutos/ 100 grados/ vel. 4, ves echando el resto antes de que acabe el tiempo programado. Acaba de incorporarlo con la espátula si procede.
  7. Vierte la masa de las croquetas en un bol previamente humedecido con agua, cubre con papel film, pegando este a la masa para que no se haga costra, o bien en una manga pastelera, deja enfriar la masa y reserva en el frigorífico un mínimo de 8 horas.
  8. Pasado este tiempo forma las croquetas y pásalas por pan rallado, huevo y otra vez pan rallado. Fríelas en abundante aceite caliente, mejor que las cubra las croquetas.
  9. Nota : – Un roux es la mezcla de harina y grasa que se usa para ligar muchas de las salsas básicas. – Para desalar el bacalao, deberás ponerlo en un bol cubierto de agua fría al menos 24 horas, cambiándole el agua unas 3 o 4 veces como mínimo.
