Esta receta es de mi libro de la thermomix y es alsaciano; un pan dulce tipo briox y tanto con la otra receta que es sin masa madre como con esta, podéis hacer también un panetone, puesto que es lo mismo, y si no tenéis thermomix, lo podéis amasar, en otro robot que amase, o en una panificadora puesto que la masa es muy blanda y se pega en las manos.

  2. 150 gr pasas de corinto
  3. 1 cda kirsch
  4. Masa madre
  5. 50 gr leche

  1. Pulveriza el azúcar y reserva.v-5-10. En un bol pon las pasas con el kirsch
  2. Masa madre : pon la leche yprograma 1 min. T-37º v -1. Añade la levadura y la harina y prog 30 seg v-3. Amasa 1 min vaso cerrado v-espiga deja reposar dentro del vaso por lo menos 15 min (yo aquí lo pongo con leche tibia que cubra para hacelerar su subida y luego uso esa misma leche pesandola para la preparación)
  3. Masa kugelhopf: cuando la masa madre haya doblado su volumen añade la leche, los huevos, el azúcar, la harina, y la sal programa 1 min v-6
  4. Amasa 3 min vaso cerrado v- espiga y mientras amasa añade por el vocal la mantequilla poco a poco
  5. Por último agrega las pasas con el kirsch y mezcla 1 min vaso cerrado velocidad espiga, deja reposar la masa dentro del vaso una hora hasta que doble su volumen (también la puedes sacar a otro bol si necesitas la thermomix) es una masa blanda
  6. Prepara el molde untado con bastante mantequilla, pega en el fondo y laterales las almendras fileteadas y coloca en cada ranura una entera
  7. Mete la masa en el molde y deja doblar volumen solo por la mitad
  8. Mételoen el horno frío sin precalentar y con un vaso por la mitad de agua caliente y enciende en ese momento el horno a 180º unos 40 min más o menos, pincha con una aguja y si sale limpio ya esta
  9. Si eleguis ponerle lo otro igualmente echarle el kirs o ron
